Crockpot Chicken Adobo September 15, 2015

I haven’t made any crock pot recipes in a while. Living in Alaska we don’t have AC and it has been so hot this summer that I really didn’t want to heat up the kitchen so I knew it was time to bust it out. This recipe was crazy simple to make and oh so tasty. Dump everything in the pot and forget about it.

 

Ingredients:

  • 2 shallots, minced
  • 6 cloves garlic, minced
  • 3 tbsp dark brown sugar
  • black pepper
  • 1/4 tsp cayenne pepper
  • 2 bay leaves
  • 1/2 cup chicken stock
  • 1/2 cup low sodium soy sauce
  • 1/4 cup apple cider vinegar
  • 2lbs boneless, skinless chicken thighs

Directions:

In the crock pot, mix all ingredients, except chicken, together. Add the thighs in and toss in the sauce. Set pot to low and cook 6-8 hours.
