We always have fish in the freezer. It’s a staple at this house. I happened to pick up some cod on a killer sale and rather than the standard fish and chips I decided to make this recipe from Rachael Ray’s 30-Minute Comfort foods. I will say to make sure you use a firm whitefish or it will fall apart on you during the cooking. Overall a mild flavored dish but still tasty.


  • 3tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 small onion, chopped
  • 1/2 carrot, chopped
  • 1tsp dried herbes des Provence
  • 1 cup dry white wine
  • 1/2 cup tomato sauce
  • 1 1/2 lbs cod or another firm white fish
  • salt and pepper

In a medium skillet over medium heat, heat 2 tbsp olive oil. Add onion, garlic and carrot. Saute vegetables 3-5 minutes. Add herbes and wine to pan and reduce liquid for 1-2 minutes. Add tomato sauce and remove from heat.

Preheat broiler to high and place a rack in the center of the over. Season fish with salt and pepper.

In a second large skillet, heat 1 tbsp oil over medium hear. Add fillets to pan. Cook 3 minutes, flip and add sauce. Place skillet under hot broiler and continue cooking until fish is flaky.
