Weeknight Spaghetti and Meatballs February 10, 2015

I love nothing more than a pot of spaghetti and meatballs that has been simmering all day long, but sometimes there just isn’t time to do it. When I came across this recipe in Rachael Ray’s 30-Minute Comfort Foods I wanted to give it a try. I thought it was very tasty and had some depth, despite the quick cooking time.


  • 1lb lean ground beef
  • 1 egg, beaten
  • 1/2 small onion, chiopped
  • 2 cloves garlic, minced
  • 1/4 cup grated parmesean
  • 1/2 cup Italian bread crumbs
  • Pepper, to taste
  • 1 tbsp olive oil
  • 1/2 cup red wine
  • 28oz can crushed tomatoes
  • 1/2 tsp red pepper flakes
  • 2 pinches dried oregano
  • Palmful of chopped fresh parsley
  • 3/4 lb spaghetti

Cook spaghetti according to package directions.

Combine meat, egg, onion, garlic, cheese, breadcrumbs and pepper in a bowl.

Head a deep skillet over medium high heat and add oil. Roll the meat into small balls and drop in pan. Give the pan a shake and cover. Cook meatballs for 8 minutes, giving the pan a shake frequently to keep them from burning.

Add wine and let reduce for 1-2 minutes. Add tomatoes, red pepper, parsley and oregano. Simmer until pasta is ready. Toss pasta and sauce and serve.
