The hubs loves to fish and is always bringing home fresh stuff for me to make. A common one is trout. Those who haven’t had a lot of fresh trout may not realize that it can have a muddy flavor. I came across this recipe in “Home Cooking the Costco Way” and by marinating the fish overnight there was no muddy flavor at all. Very simple to make and tasty.
- Whole trout
- Italian salad dressing
- Lemon Pepper
- Garlic Salt
- 1 small onion, sliced
- 2 tbsp melted butter
Marinate trout in Italian Dressing overnight.
Preheat oven to 350.
Place trout in well greased baking dish and discard marinade. Season trout cavity with salt, pepper, lemon pepper and garlic salt. Fill cavity with onion.
Drizzle melted butter over the fish.
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake until fish flakes. Serve immediately.
