By now we have established my love for my crock pot. It is my friend. I am always looking for different recipes to try and had added this one to my list. It was simple to make but I cut the honey down from 1 cup to 3/4 and added veggies at the end because I felt like this dish needed more substance. The hubs loved it and I thought it was good as well.
- 2lb boneless, skinless chicken thighs
- Salt and pepper
- 3/4 cup honey
- 1/2 cup soy sauce
- 1 tbsp onion powder
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 4 teaspoons cornstarch dissolved in 6 Tablespoons water
- Sesame seeds
- Veggies if desired
Season both sides of chicken with lightly with pepper, put into crock pot. Top with onion powder and red pepper flakes.
In a small bowl, combine honey, soy sauce, ketchup and garlic.
Pour over chicken.
Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Cut chicken into bite size pieces, chop veggies if using and add to the crock pot. Start your rice and allow the sauce in the crock pot to thicken while doing so. Serve sprinkled with sesame seeds.
