Grilled Pepper-Crusted Strip Steaks with Creamy Garlic Spinach July 2, 2012

Filed under: Costco — kariryerson @ 8:06 am

We have had this before and really enjoy it. The spinach recipe is super simple and so tasty. Its not nearly as heavy as most creamed spinach recipes are which is very nice. This meal only takes a short amount of time to put together (actually it only takes as long as you take to grill the steak.) I got this from one of my favorite Costco cookbooks.

Ingredients:

Peppery Rub

  • 1 tsp lemon pepper
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground chipotle pepper
  • Steak

Creamy Garlic Spinach

  • 16oz package fresh baby spinach
  • 5.2oz package garlic and herb Boursin cheese
  • 1 tbsp milk

Directions:

Combine the rub ingredients; press evenly onto steak. Place steak on grill over medium. Grill, uncovered, until your steak reaches desired doneness.

Meanwhile, prepare the spinach. Bring a large pot of water to a boil. Add spinach; remove from the heat. Stir just until spinach is wilted. Drain well, pressing out excess liquid. Wipe the pot dry; return spinach to the pot. Add cheese and milk; stir until cheese melts and coasts spinach evenly.
