Lemon Pepper Chicken September 6, 2011

This is a super simple, 3 ingredient entree that tastes so good. I almost always have the ingredients laying around so I can put it together in about 5 minutes and pop it in the oven.


  • Whole chicken, about 5 lbs
  • 1/2 cup (1 stick) butter at room temp
  • 3 tbsp lemon pepper seasoning


Heat an over to 325.

In a small bowl mix together the butter and the seasoning.

Rinse off the chicken and pat dry. Very gently loosen the skin away from the meat trying not to tear it.

Using your fingers, push the butter mixture under the skin to that every part of the bird has some. Put any remaining on top of the breasts.

Please in an ungreased roasting pan and back for 50-55 minutes until cooked through.
