Chicken Curry Soup February 3, 2011

This is a cheaters recipe. I use a prepackaged meat from Trader Joes (I love this store by the way, amazing stuff) and a whole bunch of other things that are laying around to make an awesome meal.

Ingredients:

  • 1 tbsp olive oil
  • 1 large carrot, chopped
  • 1 small onion, diced
  • 1 tbsp Garam Masala
  • 1 packed Trader Joes Curry Chicken Tenders, diced and all liquids held on to
  • 1 14.5oz can diced tomatoes
  • 1 cup dried chick peas, soaked overnight
  • 4 cups chicken broth
  • 1 cup frozen peas

Directions:

In a large pot over medium high heat, heat the olive oil. Add the carrot and onion and saute for 3-5 minutes until they just begin to brown. Add the Garam Masala and cook for 1-2 minutes until the spice are toasted. Add the chicken, browning for about 5 minutes. Add the leftover juice and tomatoes, scrapping up the browned bits stuck to the bottom of the pan.

Add the chicken broth and bring to a boil. Once boiling, add the chickpeas, cover, reduce heat to low and simmer for 1 to 1.5 hours until the chickpeas are tender. Add the frozen peas and serve.
